Protein: For the Love of Salmon

I have been craving protein lately and specifically I wanted salmon. I decided to do a big bake and prep some for the week ahead.


Super easy: 2 salmon fillets, homemade honey mustard dressing, and mixed greens.

Easy honey mustard dressing: a little olive oil, equal parts honey and dijon mustard, add a little lemon juice, and some garlic powder and pepper to taste.


Drizzle the honey mustard dressing over the salmon fillets and seal up the aluminium foil to bake the salmon in a pouch.


Bake at 350 degrees for about 25 minutes - I prefer my salmon just cooked, where it's still super tender and moist... melts in your mouth.


Toss some of the honey mustard dressing with the mixed greens and whatever other veggies you have ready.

Once the aluminium pouch puffs out, the salmon is cooked.


As soon as I take the salmon out of the oven, I open the pouch right up to stop the salmon from cooking further.


Serve over tossed salad. Enjoy!
